August Theme: Potlucks. What do you take with you?

Mexican Cornbread

1 can (17 oz) cream style corn
1/2 C egg substitute (equal to 2 eggs)
1 C yellow cornmeal
3/4 C skim milk
3 T canola oil
1/2 t baking soda
1/2 t salt (opt.)
1 can (4 oz) diced green chiles
2 oz. reduced fat cheddar cheese, grated

Preheat oven to 400 degrees. Mix all ingredients and pour into an 8" X 8" pan that has been sprayed with non-stick cooking spray. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Serve hot or cool for a yummy south of the border treat!
