Carrot-Pineapple Bread

This is one of my staple recipes that I love to make! Yummy, easy to make, and perfect for giving to neighbors and friends as a tasty treat.

Mix until smooth:
3 eggs
1 1/4 cup oil
2 cups sugar
1 cup grated carrots
1 cup crushed pineapple (drained)

Then add:
3 cups flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. soda

Bake in 2 greased loaf pans at 350 degrees for about 1 hour.
